About Us

The founder, Stacy Harfert, started making ice cream during the COVID-19 pandemic with her two sons to sell at small local events. As she learned more about other ice cream bars available in stores, she realized that they were all boring – both in flavor and appearance. With a background in product development and design, she looked at ice cream through a new lens. Leveraging a creative spirit, she added colorful chocolate drizzle to her delicious, all-natural vanilla ice cream recipe, and created several new ice cream flavors. As neighbors and friends tried the bars, it became apparent that there aren't commercially available products that taste as great and look as festive as the Roonies ice cream bars. 

Less than a year later, Roonies Ice Cream was formed, and a commercial kitchen space was constructed with the capacity to produce over 1,000,000 ice cream bars per year. Roonies’ products can be found at numerous grocery and convenience stores throughout Utah. 

Since Roonies started in 2020, we had no idea the growth we would experience during that last year. We are proud to be featured in 13 convenience stores all along the Wasatch back, 10 locations at Park City Mountain Resort, and numerous other wholesale customers including Talisker, Victory Ranch, Red Ledges, Hyatt Centric Park City, Levy Restaurants Salt Lake City, Tina's Bakery, The Junction, and more!

Roonies offers a very special private label program where we brand our ice cream cups for our clients. Prior customers include Days of '47 Rodeo, R&R BBQ, Vail Resorts, and NanoAvionics.

You can also find Roonies at local events including REAL Salt Lake at American First Stadium, Park Silly Sunday market, Day's of '47 Rodeo, Park City Kimball Arts Festival, and our home town Heber Market.

Roonies Ice Cream is a certified woman-owned small business, Registered Utah’s Own brand, and was awarded the Heber Valley Chamber of Commerce “2021 Business of the Year.”
